
For a minute I wondered if this was a recipe I'd like. But then I poured salsa all over the chicken, remembered how much I looooove salsa, and knew all would be right in the world.
However, there's one small problem. (Isn't there always?) I have a fear of, well, basically everything. Including leaving my slow cooker unattended. I don't do it often, but when I do, I spend my whole day imagining my apartment going up in flames.
And then I start imagining not just the apartment, but everything inside the apartment... like my camera. Or our computers. Or, God forbid, my DVR.
I'm having a panic attack.

You're so . . . well . . . OCD.
I have frequently left slow cookers on all day over the last 30 years and I have yet to see it catch on fire.
I have a good idea. Take your slow cooker to work and plug it in under your desk. :)
One little note on slow cooked chicken: I have never like it. It turns the texture funny. Let me know what you think. I am really curious.
As your mother said I have left them at home many times on (but I have to admit I have some of those same visions) and it never happens.
second comment. when it is your mother in law calling you can answer the phone. honest I will not bug you often.

Steph doesn't answer her phone to anyone. We've all learned that it's not personal, except my mother still doesn't understand why Steph doesn't answer her phone.
Everyone says, as if it will make a difference, "But it's ME calling her!"
Steph is an equal-opportunity introvert. She won't even answer the phone to me most of the time.
My recommendation: Text her.
By the way, the chicken came out great!
The texture of "crockpot chicken" doesn't bother me at all. Actually, when I cook chicken on the stove or in the oven, I always overcook it and it comes out ridiculously dry. This was a definite improvement.
